Chicken livers with onions

Chicken livers with onions

Ingredients:

  • 500 g of chicken livers
  • 2 – 3 onions
  • 2 tbsp frying oil
  • 50 ml wine (a sweeter kind is recommended)
  • salt
  • pepper
  • parsley

 

Instructions:

  • Wash and drain the chicken livers. You can cut them into smaller pieces, if you think they are too big, or you can leave them as is.
  • Cut the onions. Heat the cooking oil in a skillet over medium – low heat and add the onions. Let cook for 5 - 6 minutes until they soften. Stir often.
  • Add the chicken livers and stir delicately so they don’t get crumbled. Cover the skillet with a lid and let cook for 10 minutes. Stir every 2-3 minutes, while also turning the chicken livers on all sides to make sure they cook evenly.
  • Pour the wine, add salt and pepper, stir and let cook uncovered for another 5 minutes. At the end, add some finely chopped parsley.
  • Remove from the fire and it is ready to be devoured. You could serve it with mashed potatoes (or any kind of potatoes really) or polenta.
