Hummus

Hummus

Ingredients:

  • 1 can chickpeas (400 grams or 14 ounces or about 2 cups drained, cooked chickpeas)
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons tahini
  • juice from 1/2 lemon, plus more as needed
  • 1 teaspoon ground coriander
  • 1 small clove garlic, minced (optional for a social friendly version)
  • 1 teaspoon salt
  • 1/2 teaspoon finely ground black pepper

 

Instructions:

  • Drain and rinse the chickpeas, reserving the liquid from the can.
  • Combine the chickpeas, olive oil, tahini, lemon juice, coriander, garlic, salt, and pepper in a bowl. Mash the ingredients together using a hand mixer, while progressively adding some of the reserved liquid to obtain the consistency that you want. You can also use a food processor or a blender.
  • Scrape down the sides of the bowl as needed to integrate any large chunks.
  • Taste and add more of any of the ingredients to taste.
  • Transfer the hummus into a bowl and serve with raw vegetables.
